Pan-Seared Tilapia with Mango-Ginger Sauce

I found a great book at the library a few weeks ago and have enjoyed several recipes from it.  It’s Robin to the Rescue by Robin Miller.  The recipes are easy and many can be made in advance or frozen.  We made this recipe tonight and even the kids loved it!

Recipe: Pan-Seared Tilapia with Mango-Ginger Sauce

Ingredients (serves 4)

  1. 1 large ripe mango, peeled, seeded, and chopped
  2. 1 tbsp reduced-sodium soy sauce
  3. 1 tbsp water, or more as needed
  4. 1 tbsp peeled and minced fresh ginger
  5. 1 clove garlic
  6. 4 tiliapia or halibut fillets (about 5 oz each)
  7. salt and freshly ground black pepper to taste
  8. 2 teaspoons olive oil
  9. 2 tbsp chopped fresh chives

Instructions

  1. In a blender or food processor, combine the sauce ingredients (first 5 ingredients) and process smooth, adding more water as necessary to create a thick sauce.
  2. Season both sides of the tilapia with salt and pepper. Heat the oil in a large skillet over medium-high heat. Add tilapia to the hot pan and cook until golden brown, 2-3 minutes per side. Add the sauce to the tilapia, bring to a simmer, and let simmer until the fish is fork-tender, 1-2 minutes.
  3. Transfer the tilapia and sauce to a warm serving platter, top with the chives and serve
