Jack Quesadillas with Pear Salsa

Woohoo, I found one of my favorite recipes that I clipped from the AJC a long time ago.  This is a great party appetizer.  I love the salsa, it’s so unique!  I’m thinking this would be good for a Labor Day party!  I’ll bet you could fix the quesadillas on the grill too, or just buy some lime-flavored tortilla chips.  It’s all good!

Recipe: Jack Quesadillas with Pear Salsa

Ingredients

Pear salsa-

  1. 4 cups chopped, peeled Anjou pear (about 2 pounds)
  2. 1/3 cup chopped red onion
  3. 2 tablespoons chopped fresh or 2 teaspoons dried mint
  4. 1 tablespoon grated lime rind
  5. 2 tablespoons fresh lime juice
  6. 1 teaspoon granulated sugar
  7. 1/2 teaspoon freshly ground black pepper
  8. 1 jalapeno pepper, seeded and chopped

Quesadillas-

  1. 8 (8-inch) fat-free flour tortillas
  2. 2 cups (8-ounces) shredded Monterey Jack cheese
  3. 1/2 cup chopped green onions

Instructions

  1. To prepare salsa, combine pears, onion, mint, lime rind and juice, sugar, black pepper and jalapeno pepper in a bowl, cover and chill.
  2. To prepare the quesadillas, place 1 tortilla in a medium non-stick skillet over medium heat and top with 1/2 cup cheese.  Sprinkle with 2 tablespoons green onions; top with a tortilla.  Cook 3 minutes, pressing down with a spatula until cheese melts.  Turn carefully and cook until thoroughly heated (about 1 minute).  Repeat procedure iwth the remaining tortillas, cheese and green onions.
  3. Cut each quesadilla into sixths; serve with pear salsa.
