Recipe: Carrot Potato Bake

Ingredients

  1. 6-8 potatoes, peeled & shredded (6 cups)
  2. 1 ½ cups shredded carrots
  3. ½ cup finely chopped onion
  4. 2 cups whipping cream
  5. 1 to 1 ½ tsp salt
  6. Dash pepper
  7. 1 TBSP butter
  8. ½ cup soft bread crumbs
  9. 2 TBSP chopped fresh parsley

Instructions

  1. Preheat oven to 350°. Lightly grease 13×9 inch (3-quart) baking dish.
  2. In large bowl, combine potatoes, carrots, onion, cream, salt & pepper; spoon into prepared baking dish.
  3. In small saucepan, melt butter; stir in bread crumbs and parsley. Sprinkle over potato mixture.
  4. Bake for 50-60 minutes or until tender.
