Meatloaf with Pineapple Sauce

This is a variation of your typical meatloaf.  The pineapple brings a sweet and interesting flavor, give it a try…it’s delicious!

Recipe: Meatloaf with Pineapple Sauce

Ingredients

  1. 1 ½ lb ground beef
  2. 1 cup round buttery cracker crumbs
  3. 1/3 cup milk
  4. ¼ cup chopped onion
  5. ¼ cup catsup
  6. 1 TBSP Worcestershire sauce
  7. 1 egg, lightly beaten
  8. Salt & pepper

Topping

  1. 8 ¼ oz can crushed pineapple in heavy syrup, undrained (or in juice)
  2. ½ cup ketchup
  3. 2 TBSP brown sugar (3 TBSP if pineapple is in juice)
  4. 2 tsp cornstarch

Instructions

  1. Preheat oven to 350° Mix together all meat loaf ingredients.
  2. In ungreased 13×9” pan, form mixture into 9×4” loaf. Bake for 45 minutes.
  3. In small saucepan, combine all sauce ingredients; mix well.
  4. Cook over medium heat until mixture boils and thickens, stirring frequently. Spread on top of meat loaf; bake for an additional 15-20 minutes. Let stand 5 minutes before slicing.
