Recipe: Baked Shrimp and Pasta
Ingredients
2 lb large shrimp, peeled and deveined
6 Tbsp extra-virgin olive oil
1 cup ptomato puree
1 Tbsp brown sugar
Salt and pepper
Angel hair pasta, cooked
juice from 1 lemon, plus wedges for serving
1 large onion, finely chopped
2 Tbsp oregano
1 bay leaf
1/2 lb feta cheese, crumbled
Instructions
Preheat oven to 350 degrees. On a rimmed baking sheet, toss shrimp with lemon juice and arrange in a single layer. Set aside.
In a large skillet, heat the olive oil over medium-high heat. Add chopped onions and cook until tender (about 5 minutes). Add garlic, tomato puree, oregano, brown sugar, bay leaf and 1/2 teaspoon each of salt and pepper. Lower heat and simmer for 15 minutes.
Discard bay leaf and pur the sauce over shrimp; sprinkle feta on top. Bake in oven for 15 minutes, then place under broiler until the feta is lightly browned.
Serve with lemon wedges and pasta.
