Baked Shrimp and Feta

My sisters put together a family cookbook a few years ago for Christmas.  They did such a fabulous job!  And the recipes are great too :)   This one is from my sister, Missy ~

Recipe: Baked Shrimp and Pasta

Ingredients

  1. 2 lb large shrimp, peeled and deveined
  2. 6 Tbsp extra-virgin olive oil
  3. 1 cup ptomato puree
  4. 1 Tbsp brown sugar
  5. Salt and pepper
  6. Angel hair pasta, cooked
  7. juice from 1 lemon, plus wedges for serving
  8. 1 large onion, finely chopped
  9. 2 Tbsp oregano
  10. 1 bay leaf
  11. 1/2 lb feta cheese, crumbled

Instructions

  1. Preheat oven to 350 degrees.  On a rimmed baking sheet, toss shrimp with lemon juice and arrange in a single layer.  Set aside.
  2. In a large skillet, heat the olive oil over medium-high heat.  Add chopped onions and cook until tender (about 5 minutes).  Add garlic, tomato puree, oregano, brown sugar, bay leaf and 1/2 teaspoon each of salt and pepper.  Lower heat and simmer for 15 minutes.
  3. Discard bay leaf and pur the sauce over shrimp; sprinkle feta on top.  Bake in oven for 15 minutes, then place under broiler until the feta is lightly browned.
  4. Serve with lemon wedges and pasta.
