Balsamic-Garlic Chicken Breasts

School’s in session but it’s still 95 degrees out.  What’s up with that?  While it’s hard to get back into the swing of things, especially in the kitchen, it’s nice to start settling back into a routine.  I’ve slowly been adding food to the freezer in anticipation of those nights when one kid is heading to football and the other to soccer.  And as always, a quick dinner is appreciated!  Thanks to my sweet friend Janet for providing this fast chicken recipe!

Recipe: Balsamic-Garlic Chicken Breasts

Ingredients

  1. 4 (6-oz) skinned and boned chicken breasts
  2. 1 tsp. salt
  3. 1 tsp. pepper
  4. 2 Tbsp. butter
  5. 1 Tbsp. vegetable oil
  6. ½ cup chicken broth
  7. ¼ cup balsamic vinegar
  8. 1 Tbsp. fresh lemon juice
  9. 3 garlic cloves, chopped
  10. 1 ½ tsp. honey

Instructions

  1. Sprinkle chicken breasts with salt and pepper.
  2. Melt butter with oil in a large skillet over medium-high heat; add chicken, and cook 6 to 7 minutes on each side or until done. Remove chicken, and keep warm
  3. Add chicken broth and next 4 ingredients to skillet, and cook 5 minutes or until slightly thickened, stirring to loosen particles from bottom of skillet. Slice each chicken breast into 5 pieces and spoon sauce over chicken.
